Brasserie L'Oustau brings a new American interpretation of classic French foods served at brasseries throughout Provence, an area of southern France famous for sun-kissed produce and seafood harvested fresh from the Mediterranean.
With a warm and inviting ambiance, the restaurant's lofty ceilings, expansive windows and spacious seating surround a central, open kitchen which is reminiscent of the original brasseries found within French countryside breweries.
Generations ago in France the local brewery, called a "brasser", began to serve small plates of simple, hearty and moderately priced food, and the brasserie restaurant was created.
Today's brasserie is where French families visit to enjoy their country's most traditional and favorite foods - pommes frites, hanger steak, slow-cooked onion soup topped with melting gruyere cheese, seafood stew with fresh seasonings, duck confit, chicken or short ribs or savory sausages in their own flavorful sauces — the list goes on. And cheeses, prepared as rich blends melted to dip crusty bread, or select artisanal pieces enjoyed on their own.
